Description
Cardoon is a very old, multiannual vegetable from the Mediterranean area. The bleached, ribbed leaves need to be cooked for consumption. In order to bleach, you can cover the plant with a burlap sack three weeks before it flowers. Most of the times cardoon is grown because of its very nice, artichoke-like flowers. If you sow in time, Cardoon will already flower the first year. The crop can withstand a great amount of frost, so you only need to cover it during heavy frost.
